Her ya\u015f grubu taraf\u0131ndan sezonun favori yiyece\u011fi olarak tercih edilen dondurma ile ilgili bilgilendirmelerde bulunan \u0130stanbul Ayd\u0131n \u00dcniversitesi (\u0130A\u00dc) Gastronomi ve Mutfak Sanatlar\u0131 B\u00f6l\u00fcm Ba\u015fkan\u0131 Prof. Dr. Kamil Bostan ayr\u0131ca sa\u011fl\u0131kl\u0131 dondurma \u00fcretimini, saklama ko\u015fullar\u0131n\u0131 ve fazla t\u00fcketimin neden olaca\u011f\u0131 sorunlar\u0131 dile getirdi.<\/p>\n<p>\u201cAz t\u00fcketilirse faydas\u0131 \u00e7ok\u201d<\/p>\n<p>\u00d6zellikle t\u00fcketilen miktar konusunda bilin\u00e7li davran\u0131lmas\u0131 gerekti\u011fine ve bu sayede dondurman\u0131n sa\u011fl\u0131k a\u00e7\u0131s\u0131ndan faydal\u0131 olabilece\u011fini s\u00f6yleyen Prof. Dr. Kamil Bostan, \u201cDondurma besin de\u011feri y\u00fcksek bir g\u0131da maddesidir. S\u00fct ya da s\u00fct tozundan elde ediliyor. Protein ve ya\u011f oran\u0131 \u00e7ok y\u00fcksek. Meyveli ise i\u00e7erisinde mineraller ve vitaminleri bar\u0131nd\u0131rabiliyor. \u015eekersiz dondurma yapamazs\u0131n\u0131z. Yaln\u0131zca tat sa\u011flamak i\u00e7in de\u011fil, dondurman\u0131n k\u0131vam\u0131n\u0131n tutmas\u0131 i\u00e7in de \u015feker kullan\u0131l\u0131yor. S\u00fctl\u00fc dondurmalarda \u015feker oran\u0131 y\u00fczde 10-15 aras\u0131nda de\u011fi\u015firken meyve p\u00fcresinden elde edilen dondurmalarda bu oran y\u00fczde 20\u2019lere varabiliyor. Ayr\u0131ca s\u00fctl\u00fc dondurmalar y\u00fczde 12 civar\u0131nda ya\u011f bar\u0131nd\u0131r\u0131r. Dondurma a\u015f\u0131r\u0131 t\u00fcketilirse \u015feker ve ya\u011f zengini oldu\u011fundan kilo problemi olu\u015fabilir. Bu nedenle dikkatli t\u00fcketilmesi gerekir\u201d \u015feklinde konu\u015ftu.<\/p>\n<p>\u201cNereden ald\u0131\u011f\u0131n\u0131za dikkat edin\u201d<\/p>\n<p>Dondurma i\u00e7erisindeki katk\u0131 maddelerine ve sat\u0131n al\u0131rken dikkat edilmesi gereken noktalara da de\u011finen Kamil Bostan, \u201cDondurma yaparken \u00e7e\u015fitli katk\u0131 maddeleri kullan\u0131l\u0131yor. K\u0131vam\u0131n\u0131n tutturulmas\u0131, hemen erimemesi, i\u00e7erisindeki s\u0131v\u0131lar\u0131n kristalize olmamas\u0131 i\u00e7in \u00e7e\u015fitli miktarlarda birden fazla katk\u0131 maddesi dondurma i\u00e7erisinde yer alabilir. End\u00fcstriyel \u00fcretimlerde \u2018em\u00fclgat\u00f6r\u2019 ve \u2018stabilizat\u00f6r\u2019 katk\u0131 maddeleri kullan\u0131lmadan dondurma \u00fcretilemez. Tar\u0131m ve G\u0131da Bakanl\u0131\u011f\u0131\u2019n\u0131n izin verdi\u011fi katk\u0131 maddeleri insan sa\u011fl\u0131\u011f\u0131 a\u00e7\u0131s\u0131ndan tehlikesizdir. End\u00fcstriyel dondurmalarda bu katk\u0131 maddeleri kullan\u0131l\u0131r. Di\u011fer \u00fcreticiler de e\u011fer ke\u00e7iboynuzu gam\u0131 (sak\u0131z\u0131) gibi do\u011fal katk\u0131 maddeleri kullan\u0131yorsa bunlar sa\u011fl\u0131kl\u0131d\u0131r. Ancak \u00e7o\u011fu \u00fcreticinin dondurma i\u00e7erisine ne koydu\u011funu bilemiyoruz. K\u00fc\u00e7\u00fck \u00fcreticinin denetimleri de bir problem ya\u015fand\u0131ktan sonra yap\u0131l\u0131yor. O nedenle dondurma alacaksak bildi\u011fimiz, g\u00fcvendi\u011fimiz \u00fcreticilerden almal\u0131y\u0131z\u201d ifadelerini kulland\u0131.<\/p>\n<p>\u201cG\u0131da boyas\u0131 tehlikeli olabilir\u201d<\/p>\n<p>Dondurman\u0131n i\u00e7erisindeki tek \u2018masum olmayan\u2019 i\u00e7eri\u011fin g\u0131da boyalar\u0131 oldu\u011funu vurgulayan Bostan, \u201cDondurma i\u00e7erisinde, izin verilen ancak sa\u011fl\u0131k sorunlar\u0131na neden olabilece\u011fi iddia edilen tek katk\u0131 maddesi g\u0131da boyalar\u0131d\u0131r. End\u00fcstriyel dondurma \u00fcreticilerinin tamam\u0131 dondurman\u0131n rengini tutturabilmek i\u00e7in y\u00fcksek miktarda renklendiriciler kullan\u0131yor. Hen\u00fcz kesinle\u015fmi\u015f olmasa da g\u0131da boyalar\u0131n\u0131n \u00e7ocuklarda \u2018hiperaktiviteye\u2019 yol a\u00e7t\u0131\u011f\u0131n\u0131 savunan \u00e7al\u0131\u015fmalar mevcut. \u00d6zellikle do\u011fal olmayan renklerdeki dondurmalar\u0131n \u00e7ocuklar taraf\u0131ndan dikkatli t\u00fcketilmesi gerekiyor\u201d uyar\u0131s\u0131nda bulundu.<\/p>\n<p>\u201cEksi 18 derecede saklanmal\u0131\u201d<\/p>\n<p>Dondurman\u0131n saklama ko\u015fullar\u0131 hakk\u0131nda da bilgilendirmelerde bulunan Bostan, \u201cDondurma ad\u0131 \u00fczerinde \u2018dondurulmu\u015f\u2019 bir \u00fcr\u00fcn. Dondurulmu\u015f bir \u00fcr\u00fcn\u00fcn bozuldu\u011funu anlamak t\u00fcketici i\u00e7in olduk\u00e7a g\u00fc\u00e7. Dondurma e\u011fer hijyenik ko\u015fullarda \u00fcretilmemi\u015fse i\u00e7erisinde bir tak\u0131m patojenler (bakteriler) yerle\u015febiliyor. Erime ger\u00e7ekle\u015firken bu patojenler a\u00e7\u0131\u011fa \u00e7\u0131k\u0131yor ve h\u0131zla \u00fcr\u00fcyorlar. Bu nedenle dondurma, bakterilerin \u00e7o\u011falmay\u0131 tamamen durdurdu\u011fu eksi 18 derecede saklanmal\u0131, dondurucudan \u00e7\u0131kart\u0131ld\u0131\u011f\u0131nda t\u00fcm \u2018dondurulmu\u015f\u2019 \u00fcr\u00fcnlerde oldu\u011fu gibi hemen t\u00fcketilmelidir\u201d dedi.<\/p>\n<p>\u201cH\u0131zl\u0131 yenirse bo\u011faz enfeksiyonlar\u0131na davetiye \u00e7\u0131kart\u0131r\u201d<\/p>\n<p>Dondurma t\u00fcketildi\u011finde ger\u00e7ekle\u015fen bo\u011faz enfeksiyonlar\u0131n\u0131n sebebinin h\u0131zl\u0131 yemekle ile alakal\u0131 oldu\u011funu s\u00f6yleyen Bostan son olarak da, \u201cDondurma t\u00fcketiminde bir ba\u015fka sorun ise h\u0131zl\u0131 yenmesi. Donmu\u015f durumda olan \u00fcr\u00fcn\u00fc h\u0131zl\u0131 t\u00fcketti\u011fimizde bo\u011faz\u0131m\u0131zdaki bakteri direnci d\u00fc\u015f\u00fcyor. Ba\u011f\u0131\u015f\u0131kl\u0131\u011f\u0131n\u0131 yitirmi\u015f doku h\u0131zla enfekte olabiliyor. \u2018Dondurma yeme, bo\u011faz\u0131n \u015fi\u015fer\u2019 inanc\u0131 buradan geliyor.
