Kurban Bayram\u0131\u2019nda insanlar\u0131n psikolojik olarak daha fazla yemek yeme hissi oldu\u011funu belirten Misci; \u201cKurban Bayram\u0131n\u0131n y\u0131lda bir defa olmas\u0131ndan dolay\u0131 et t\u00fcketimi ile bunun yan\u0131 s\u0131ra tatl\u0131 t\u00fcketimi de artmaktad\u0131r.Bayramlarda psikolojik olarak daha fazla yemek yenmesi hissi vard\u0131r, a\u011f\u0131r ve a\u015f\u0131r\u0131 yemek yenmesi halinde sindirim zorluklar\u0131, gaz s\u0131k\u0131nt\u0131s\u0131, haz\u0131ms\u0131zl\u0131k, mide bulant\u0131s\u0131 ve ani tansiyon y\u00fckselmesi gibi rahats\u0131zl\u0131klar g\u00f6r\u00fclebiliyor. \u00d6zellikle bu d\u00f6nemde kronik hastal\u0131klara sahip ve y\u00fcksek risk grubunda bulunan bireyler (\u00e7ocuklar ve ya\u015fl\u0131lar) dikkatli olmal\u0131d\u0131r. Bayram boyunca k\u0131rm\u0131z\u0131 et t\u00fcketiminin miktar\u0131 ve s\u0131kl\u0131\u011f\u0131 artt\u0131\u011f\u0131ndan dolay\u0131 kalp-damar hastalar\u0131, diyabet hastalar\u0131, hipertansiyon hastalar\u0131 ve b\u00f6brek hastalar\u0131 risk alt\u0131ndad\u0131r. Al\u0131nmas\u0131 gereken \u00f6nlemlerin herkes i\u00e7in ge\u00e7erli oldu\u011fu unutulmay\u0131p kurban bayram\u0131nda da; sa\u011fl\u0131kl\u0131 beslenmenin temel prensiplerine, yiyecek se\u00e7imine, porsiyon kontrol\u00fcne ve besin gruplar\u0131n\u0131n dengeli da\u011f\u0131l\u0131m\u0131na her zaman \u00f6zen g\u00f6sterilmelidir&#8221; dedi.<\/p>\n<p>\u0130\u015fte madde madde dikkat edilmesi gerekenler<\/p>\n<p>Afyonkarahisar \u00d6zel Fuar Hastanesi diyetisyenlerinden Ecem Misci Kurban Bayram\u0131 i\u00e7in uyar\u0131 ve \u00f6nerilerini \u015f\u00f6yle s\u0131ralad\u0131:<\/p>\n<p>K\u0131rm\u0131z\u0131 et; iyi kalite hayvansal proteinin yan\u0131 s\u0131ra, demir, \u00e7inko, fosfor, magnezyum mineralleri ile B12, B6, B1 ve A vitaminleri i\u00e7ermektedir.<\/p>\n<p>Ya\u011fl\u0131 etlerin doymu\u015f ya\u011f ve kolesterol i\u00e7erikleri y\u00fcksektir. G\u00f6r\u00fcn\u00fcr ya\u011flar ayr\u0131lsa dahi k\u0131rm\u0131z\u0131 etin ortalama ya\u011f i\u00e7eri\u011fi %20\u2019dir.<\/p>\n<p>Veteriner kontrol\u00fc olmayan ve uygun ko\u015fullarda kesilmeyen kurbanl\u0131k hayvanlardan insanlara tenya, salmonella, t\u00fcberk\u00fcloz, \u015farbon gibi hastal\u0131klar\u0131 bula\u015fma riski y\u00fcksektir.<\/p>\n<p>Bayram g\u00fcn\u00fc kesilen hayvan eti, bekletilmeksizin birka\u00e7 saat i\u00e7inde pi\u015firilerek t\u00fcketilir. Ancak yeni kesilmi\u015f hayvanlar\u0131n etlerindeki sertlik hem pi\u015firmede, hem de sindirimde zorluk ortaya \u00e7\u0131kar\u0131r. Midede \u015fi\u015fkinlik, haz\u0131ms\u0131zl\u0131k gibi s\u0131k\u0131nt\u0131lara neden olur. \u00d6zellikle mide rahats\u0131zl\u0131klar\u0131 \u00e7eken bireyler, eti 24 saat bekletmeden t\u00fcketmemelidir.<\/p>\n<p>Buzlu\u011fa kald\u0131r\u0131lan etleri pi\u015firmek i\u00e7in buzluktan \u00e7\u0131kard\u0131\u011f\u0131n\u0131zda, yine buzdolab\u0131n\u0131n alt raflar\u0131na indirilerek \u00e7\u00f6zd\u00fcr\u00fclmeli, \u00e7\u00f6zd\u00fcr\u00fclen et hemen pi\u015firilmeli, tekrar dondurulmamal\u0131d\u0131r.<\/p>\n<p>Et haz\u0131rlamada kullan\u0131lan kesme tahtalar\u0131nda \u00e7i\u011f sebze ve meyveleri do\u011frama i\u015flemi yap\u0131lmamal\u0131d\u0131r.<\/p>\n<p>Et en \u00f6nemli protein kayna\u011f\u0131d\u0131r fakat ayn\u0131 zamanda ya\u011f ve kolesterol de i\u00e7erir. Bu sebeple pi\u015firirken kendi ya\u011f\u0131nda pi\u015firmek gerekmektedir. Bu nedenle etlerin mutlaka sebzelerle birlikte pi\u015firilmesi veya etlerin yan\u0131nda C vitamininden zengin sebze\/salata\/ taze s\u0131k\u0131lm\u0131\u015f meyve sular\u0131n\u0131n t\u00fcketilmesi olduk\u00e7a \u00f6nemlidir. Bu y\u00f6ntem hem besin \u00e7e\u015fitlili\u011finin sa\u011flanmas\u0131n\u0131 sa\u011flar hem de sebzelerde bulunan C vitamini, demirin emilimini artt\u0131r\u0131r.<\/p>\n<p>Etler mangal yap\u0131lacaksa; k\u00f6m\u00fcrle\u015fecek \u015fekilde k\u0131zart\u0131lmamas\u0131 gerekir k\u00f6m\u00fcrle\u015fen etler her zaman kanser riski ta\u015f\u0131r.
