Kesilen kurbanlar\u0131n ard\u0131ndan ilk pi\u015firilen kavurman\u0131n kokusu bayram sabah\u0131 t\u00fcm mutfaklar\u0131 sarar. Malzemelerimiz pembele\u015ftikten sonra ku\u015fba\u015f\u0131 do\u011frad\u0131\u011f\u0131m\u0131z etlerimizi tenceremize at\u0131yoruz. Sonra etimizin daha yumu\u015fak olmas\u0131 i\u00e7in suyla \u00e7ektirmemiz gerekiyor. Suyunu da \u00e7ektikten sonra biberlerimizi at\u0131p soteliyoruz. Tuzunu biberini de att\u0131ktan sonra yakla\u015f\u0131k 20 dakika i\u00e7inde kavurmam\u0131z haz\u0131r hale geliyor\u201d dedi.<\/p>\n<p>Tel tel d\u00f6k\u00fclen pilav\u0131n p\u00fcf noktalar\u0131<\/p>\n<p>Kavurman\u0131n yan\u0131nda en \u00e7ok tercih edilen, T\u00fcrk mutfa\u011f\u0131n\u0131n vazge\u00e7ilmez lezzetlerinden olan pilav\u0131n p\u00fcf noktalar\u0131n\u0131 ise Hamdi usta, \u015fu s\u00f6zlerle anlat\u0131yor: \u201cBiz \u00f6l\u00e7\u00fc olarak be\u015f ki\u015filik bir pilav haz\u0131rlad\u0131\u011f\u0131m\u0131z i\u00e7in 500 gram pirince 50 gram \u015fehriye ekledik. Malzemelerimizi kavurduktan sonra 1 litre suyumuzu ekliyoruz. Belli bir pi\u015firme s\u00fcresinden sonra pilav\u0131m\u0131z\u0131 demlenmeye b\u0131rak\u0131yoruz. Yakla\u015f\u0131k 30 dakika sonra pilav\u0131m\u0131z servise haz\u0131r hale geliyor. Tel tel d\u00f6k\u00fclen bir pilav i\u00e7in pilav\u0131 uzun s\u00fcre kavurmak gerek, yoksa lapa olur.\u201d<\/p>\n<p>Bir lezzet klasi\u011fi f\u0131st\u0131kl\u0131 tel kaday\u0131f<\/p>\n<p>F\u0131st\u0131kl\u0131 tel kaday\u0131f\u0131n da tarifini veren Hamdi usta, \u201cF\u0131st\u0131kl\u0131 tel kaday\u0131f\u0131m\u0131z i\u00e7in 500 gram tereya\u011f\u0131n\u0131 ve 800 gram kaday\u0131f\u0131 kar\u0131\u015ft\u0131r\u0131yoruz. \u0130yice harmanlad\u0131ktan sonra kaday\u0131f\u0131m\u0131z\u0131 tepsiye koyup, \u00fczerine toz f\u0131st\u0131\u011f\u0131m\u0131z\u0131 serpiyoruz. Sonras\u0131nda \u00fcst\u00fcne tekrar tel kaday\u0131f koyup iyice bast\u0131r\u0131yoruz. E\u011fer bir g\u00fcn \u00f6nce yap\u0131p \u00fcst\u00fcne a\u011f\u0131rl\u0131k koyarsan\u0131z, kaday\u0131f da\u011f\u0131lmaz. F\u0131r\u0131nda 15 dakika alt\u0131 15 dakika \u00fcst\u00fc olmak \u00fczere pi\u015firiyoruz.
